Happy Thinking Out Loud Thursday everyone! We all know I love some meal prep so I thought I would share some of the things I’ve been meal prepping lately. Since the holiday season is officially over that can only mean one thing, it’s time to get back on track and focus on eating clean again. Don’t get me wrong, I still made an effort to eat and drink mindfully over the holiday season, but there is nothing like getting back to the stuff you regularly eat. No more dinner party food or holiday brunches at work. No more sweets in the breakroom for breakfast or multiple drinks with dinner.
Pinch of Yum’s Sweet Potato and Turkey Chili. I talked about this a while back, but I can’t get enough. I made a double batch and froze half so now I can have chili whenever I want without having to make a huge batch. I added some beer and quinoa and divided it up into quart size freezer bags so it’s perfect to pull out when the Mr. is gone during the week or pack for a quick lunch to take to work. I love that this chili has only 5 basic ingredients and comes together quick. The turkey, quinoa, black bean and sweet potatoes make this chili hearty and healthy. Yum!
Gimme Some Oven’s Perfect Baked Chicken. Have you ever seen more perfect baked chicken? Nope, that’s what I thought. I have been prepping this for lunches and dinners to serve alongside steamed broccoli, wild rice and sauted smoky garlic kale. We also brine our bird at Thanksgiving and I love the idea of brining chicken breasts and cooking them quickly at a high heat to seal in moisture. These chicken breasts are great in lots of stuff but would be awesome on a salad.
Skinnytaste’s Chimichurri Sauce. Herbs are a great way to pack a lot of flavor into your food without having to pack in fat. I made a batch of this sauce to serve over grilled chicken breasts and vegetables. It’s fresh and full of herby flavor from the parsley and cilantro. I think this is a great way to jazz up boring chicken.
Gimme Some Oven’s Chicken Pesto Soup. This soup could not be easier and is a great way to use up leftover baked or roasted chicken. The best part is it’s only a couple of ingredients, but you probably already have them in your house.
