I’ve shared some of my meal prep tips so I think it’s only fitting that I share some of my favorite recipes. The Mr. and I like variety, but there are some dishes that we enjoy almost weekly. I usually try to choose dishes that are easy to put together, but taste special and re heat really well.
Here are some of my favorites:
Blueberry Baked Oatmeal from Cookie & Kate
We love this oatmeal! I tend to make this Sunday morning then we have enough the leftovers for the next couple days. It’s healthy, so delicious and I’ve made it with fresh and frozen berries. It’s perfect either way.
Whole Wheat Apple Muffins from Smitten Kitchen
These muffins taste like apple pie without the crust. I sometimes substitute half the sugar in the batter for unsweetened apple sauce if I have it. I like making up a batch of these then freezing half that way when we pull out the other half they are fresh.
Quick and Easy Lentil Quesadillas from Pinch of Yum
The Mr. and I love these quesadillas because they are so hearty and it’s easy to throw the filling into the crock pot then make up a fresh quesadilla for dinner. If you are looking for a filling meatless meal this is a great place to start. This filling also freezes really well which is great because the recipe makes quite a bit.
Chipotle Chicken and Rice from Martha Stewart
We love this recipe because its so satisfying, healthy and simple. Its basically just chicken and rice cooked in one pot with tomatoes and some spices. If I have black beans sometimes I add them, but it’s great as is. Eaten by itself or with a large salad it’s a good thing.
Perfect Turkey Chili from The Simple Peach
I make a version of this chili all the time. We eat it by itself or with cornbread. I also like to reinvent it by eating it over baked potatoes or macaroni. Sometimes I even serve it over tortilla chips nacho style to satisfy a bar food craving. This recipe feeds a crowd, but also freezes really well too.
Meal prepping healthy and tasty food isn’t complicated and doesn’t have to be fussy. I love these recipes because I can make up a big batch then enjoy the leftovers for lunch the next day or freeze then for a day when I’m short on time or ingredients. All of these dishes are hearty, satisfying and work perfectly with lightly salads and fresh fruits which makes them perfect for meal prep.
