Our weather here in Georgia is impossible to predict. A few weeks ago the weather felt like mid fall and now it is as hot as ever. Even getting up and hitting the pavement early has not saved me from being red faced and completely exhausted after a run.
After a run in the humid heat I am always craving some way to cool down and this smoothie does the trick every time. This smoothie is a tropical burst and so refreshing. Mango is one of my favorites but the surprise from this smoothie comes from a zesty pop of cilantro. Don’t be skeptical. You will be able to taste the cilantro but in the best possible way. Coconut water is a great way to hydrate up after a sweat session because it is a natural source of electrolytes. Ditch that sports drink with high fructose corn syrup and mysterious chemicals and add a little coconut water into the mix instead.
- 2 cups coconut water, unsweetened
- 2 cup frozen mango chunks
- 1 cup frozen pineapple tidbits
- 3 large handfuls of baby spinach
- 1 cup cilantro
- 2 tablespoon chia seeds
- Blend everything except the chia seed. Once blended divide and top with chia seeds.
