I love soup because it reheats perfectly, is easy to pair with something else for a hearty meal and is just cozy Netflix watching kinda food.
Gimme Some Oven’s Tortellini Minestrone Soup – I’ve eaten this for lunch multiple times this week and am obsessed. I added in some fresh green beans with the zucchini and squash to bump up the veg a bit. I also added some sliced chicken sausage for the Mr. This is so filling and delicious!
Sally’s Baking Addiction’s Slow Cooker Chicken Chili – This is like a cross between tortilla soup and taco soup. It’s perfect, freezes well and is full of flavor. We’ve eaten this twice in the last three weeks or so. Yum!
Luxurious Butternut Squash and Sweet Potato Soup – Butternut squash soup is like liquid velvet, but the sweet potato in this one gives it some weight. I love this all by itself, with a crusty piece of bread, side salad or with a delicious bacon and grilled cheese sandwich like we had a couple nights ago.
Skinnytaste’s Crock Pot Turkey White Bean Pumpkin Chili – It might sound a bit strange, but it is so tasty. It’s one of my favorite non traditional chili recipes. The pumpkin adds a nice texture, but the green chiles really make it. Who doesn’t love the slow cooker?!
Perfect Turkey Chili – This is my go to recipe for traditional chili. It’s perfect with a side of fritos or cornbread and feeds a crowd. I also like to serve leftovers nacho style or with cooked pasta.
Soup is a meal prepper’s dream. I tend to make extra of everything and freeze half for lazy or rushed evenings.
