Happy Thinking Out Loud Thursday everyone! Per usual I am linking up with Amanda today. Spring is such a busy season for the Mr. and I, so last week I decided to prep some meals for the freezer. I hate spending money on eating out and when we get busy the last thing I want to do is cook. I’ve found that by prepping healthier food for the freezer we can eat to fit our training schedules and it’s less stress on me.
We also travel so often that getting to the store doesn’t always happen so it’s super convenient to have things in the freezer that are ready to go. I prepped some baked goods, meals for weeknight suppers and items that be thrown in the oven straight from the freezer.
I thought it would be fun to share what I’ve been cooking up lately. These recipes weren’t incredibly complicated and were assembled over a couple weeknights.
Here’s what I’ve been cooking up lately…
CALZONES – stuffed with bacon, broccoli, onion, garlic, cheese and mushrooms
MINI MEATBALLS – great on pasta, bread or dough
TURKEY ENCHILADAS – serve with a side salad
TURKEY BURGERS – serve with a salad or steamed veggies for a whole meal
BLACK BEAN & RICE BURRITOS – make beans in the slow cooker with salsa and spices
LEMON SCONES – frozen before baking making them perfect for weekend mornings with coffee
TOFFEE CHIP COOKIES – substitute toffee chips for half the chocolate chips, freeze dough balls and bake off as needed
CINNAMON OAT PANCAKES – perfect with a smear of almond butter
BAKED APPLE PANCAKE STREUSEL BARS – great in a hurry with a smoothie
I like to focus on making things that can thaw overnight in the fridge for cooking the night before or items that can be thrown right into the oven from frozen. Most of the items I like to prep can be served with a salad or steamed vegetables, so we are eating a balanced meal.
It’s always easy to avoid takeout or fast food if we have healthy food in our freezer ready to eat. Baked goodies always feel like a treat, but the best part is you can take out the exact amount that you need so you don’t eat a whole batch of cookies or have to throw spoiled food away.
